This coconut milk, which helps tame the spiciness of the curry paste, brings a creaminess to this comforting traditional soup. Because the chicken is fried in this very fragrant and spicy red curry paste before being mixed with the broth as well as the coconut milk. Khao poon is a different kind of chicken soup. Even though red curry paste can be found in most supermarkets, it is easy to make after finding the ingredients, in particular the lemongrass, galangal and kaffir lime. The version featured here is made with red curry paste. Like many traditional dishes, there is not one authentic kapoon recipe but hundreds, and each chef will add his own touch to make it more or less spicy, aromatic, or use other vegetables beyond bamboo shoots, including yardlong beans for example. It is almost as popular as another traditional soup called soto, which is often consumed with rice instead of noodles. In Indonesia, this spicy warm rice noodle soup is very much appreciated during cold rainy days.
